Grilled Sweet Corn Salsa

This scrumptious mélange can be served with anything from lowly chips or burritos to highly steak or the “pillows” below. The tomatoes add tang to the smooth sweet charred corn, exhilarated by the cilantro and excited by the scallions. Freshy-fresh!!

Around 3-4 cups salsa—side dish-garnish for 6. Total prep. time: 10-15 mins.
4 ears Sweet corn, grilled
1 large ripe tomato, chopped
2 scallions, sliced crosswise
5 sprigs cilantro, stemmed and chopped
4 tbls. olive oil
salt and pepper

Grill and de-cob the corn as in the recipe below. Toss all the ingredients thoroughly, salt and pepper to taste and enjoy. (Line your serving bowl with clean inner cornhusks and garnish with cilantro sprigs!)
